Zucchini (Apple Cobbler)


Crust:
4 cups flour
1 cup sugar
1/2 tsp. salt
1 1/2 cups margarine

Combine in large bowl and mix until crumbly and set aside.

Filling:
8 cups zucchini peeled and sliced like apples.
2/3 cups lemon juice.
Cook until tender.

Add:
1 cup sugar
1/4 tsp. nutmeg
1 tsp cinnamon

Simmer a few minutes then add 1/2 cup of crust mix to thicken. Then Cool. Pat 1/2 of the crust mixture into 13x9 pan and bake at 375 for 10 minutes. Pour zucchini mixture on top of crust. Spread evenly, top with remaining crumb mixture. Sprinkle more cinnamon on top and bake at 375 FOR 30 Minutes.

TASTES JUST LIKE APPLE COBBLER.
